Organic White Bean Soup

Looking for an easy soup that you can put on, forget about it and serve later?
Especially on cooler days.   And it is good for you!!


1 c. Organic Great Northern Beans. 
Kale leaves
Baby spinach
Chili powder, garlic cloves, salt/pepper 
Carrots, cherry tomatoes and avocado. 


I soaked white beans overnight but if you are crunches for time, you can use a can.   Because of additives in some canned goods I prefer dry. 

Drain the soaked beans, rinse thoroughly and refill crock pot with at least 4" of water at the top.    

I add several cloves of garlic that I just smashed with a cup.  Don't worry about chopping them up because it will macerate during the cook time. Add S&P, chili powder and optional sliced onions.  
Turn on high and leave for 6 hours.  

During last hour of cooking I added thinly sliced assorted colored carrots.  

Add baby spinach to your bowl and some thinly sliced kale in ribbons.  Then add very hot broth to the bowl, it will wilt the greens.   

Top with chopped cherry tomatoes  and sliced avocado. 
Salt and pepper to taste.   

Healthy, clean, easy and tasty.
